Food for the Season: Winter, Baked Apples

Ingredients:

  • 4 medium sized apples
  • 2 teaspoons sunflower seeds or walnuts
  • 2 teaspoons raisins
  • 1/2 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon
  • sesame oil

Preparation:

  1. Slice off and save the tops of the apples.
  2. With a small knife or apple corer, hollow out a one inch hole in the center of each apple. Be careful not to poke through the bottom of the apple.
  3. Mix all the other ingredients and stuff it into the apples.
  4. Close the apples by replacing the tops.
  5. Place the apples in a casserole.
  6. Bake at 375° in a preheated oven for 40 minutes or until they are tender. To get juicier apples, cover them half way through the baking.
